Last night Josh and I decided that we wanted to try the Bunch of Banana Bread from my recipe book. We made it last night and had some for breakfast and it was delicious!!
Sadly, the pictures of the ingredients are stuck on my camera :(
INGREDIENTS:
Nonstick cooking spray
1 1/2 cups all purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 slightly beaten egg whites
1 cup mashed banana (3 medium)
3/4 cup sugar
1/4 cup cooking oil
(we also added some granola to the top)
DIRECTIONS:
1. Lightly coat an 8x4x2-inch loaf pan with cooking spray; set aside. In a medium bowl combine flour baking powder, baking soda, cinnamon and salt. Set aside.
2. In a large bowl stir together the egg whites, banana, sugar and oil. Add flour mixture all at once to banana mixture. Stir just until moistened (the batter should be lumpy). Spoon batter into prepared pan.
3. Bake in a 350 degree oven for 45 to 50 minutes or until a wooden toothpick come out clean.
4. Cool in a pan on a wire rack for 10 minutes. Remove from pan. Cool completely on rack. Wrap and store overnight before slicing.
(my camera sucks at taking pics of food!)

I also made the Fruit Cup Sundae today but I didn't any pictures. All you have to do is put fruit into a waffle cone and eat. YUM :)
